Our History: A Legacy of Tradition and Quality
Colosse Cheese Store, Inc., formerly Colosse Cheese and Butter Company, was established at the turn of the century as a milk co-operative by farmers from Mexico, Parish, and Colosse, NY. In 1934, the company was officially organized as Colosse Cheese & Butter Co. John O’Mara, one of the original farmers, later acquired all the stock and operated the business for over three decades, serving the community and surrounding areas.
In 1969, Ed and Helen Raiti purchased the company from O’Mara with a vision to expand. Together with their sons, Barry, Chuck, Gary, and Joe, they developed the cheese that would make Colosse famous. They opened new outlets, spreading the reputation of Colosse Natural Cheese across the country.
In 1972, the Raitis opened a small specialty cheese shop at the corner of Rt 11 and Rt 13 in Pulaski, NY. Two years later, they added Colossal Ice Cream Shop, offering hard and soft ice cream and other treats. In 1980, they launched a Christmas packaging program, now a year-round service shipping gift packages and cheese products nationwide. By 1982, they began crafting ice cream cakes for all occasions, featuring real ice cream, delicious frosting, and specialty fillings like fudge Oreo and brownie fudge.
In October 2014, the store was purchased by Matthew Hill, who, along with his wife, continues the tradition of serving the beloved products Colosse Cheese has been known for over the years. The store remains a family-owned business with a steadfast commitment to quality and customer care.
In 2020, the store relocated just up the road on Route 13 to a larger location. This expansion has allowed Colosse Cheese to better serve its customers by offering more local New York products, continuing its legacy of excellence in quality and community focus.
